I have to admit that this recipe is one of the easiest recipes you can make for any gathering, but friends will request and demand that it appear on the menu after having it once. This spicy peanut chicken recipe can be passed as an appetizer at any gathering or served as a main dish with pasta or rice for a brunch or lunch menu. Make a bit extra of the sauce for a main dish, so you can spoon over the rice or pasta.

BBQ Peanut Butter Chicken Appetizer

Marinade
1 cup Peanut Butter, Chunky
1/4 (quarter) cup Soy Sauce
1/2 (half) cup Peanut Oil
1/4 (quarter) cup White Wine Vinegar
1/4 (quarter) cup Lemon Juice
6 Cloves Garlic, chopped
1 tsp Red Pepper Flakes
2 tsp Ginger, chopped
2 tsp Fish Sauce

Meat
2-1/2 lbs Chicken Breast, boneless and skinless, 1" cubes/strips

Equipment
1 Blender or Food Processor
24 Bamboo Skewers, 8"
1 BBQ

 

 

Procedure: prepare 2 hours before BBQ is ready
Soak bamboo skewers in water for at least 30 minutes.

Mix the ingredients for the marinade in a blender until combined. If too thick, add up to cup of water to thin.

Marinate the chicken for approximately 2 hours, then skewer.

Lightly oil the medium/hot BBQ grill. Place chicken skewers on the grill for 6-8 minutes turning 3 to 4 times. When turning, be careful not to knock off the peanut marinade. Avoid Burning the chicken.

Serve hot or room temperature.
