Cocoa Pancakes with Caramel Banana Topping

Ingredients:
3/4 cup packed brown sugar
1/2 cup heavy whipping cream
2 tablespoons margarine
2 teaspoons vanilla
4-5 medium bananas sliced diagonally

Directions

Mix all ingredients except bananas in saucepan.

Heat gently to boiling over medium heat while stirring occasionally.

Remove from heat and stir in bananas untill coated.

Pancakes

Ingredients:
2 eggs
1 1/2 cup milk
2 tablespoons oil
2 cups flour
1/4 cup sugar
4 tablespoons cocoa
2 teaspoons baking powder

Directions

Beat eggs untill foamy. Beat in milk oil. Add remaining ingredients. Spoon batter onto hot griddle. Cook on both sides untill golden brown. Serve with warm topping.


Baked Caramel French Toast

Mix 3/2 cup of melted butter with 2 cups of brown sugar. Pour in the bottom of a greased 15 X 10 baking dish.
Place a single layer of 8 slices of cinnamon raisin bread on top of sugar mixture.
Mix 2 eggs & 2 cups of milk and pour evenly over bread.
Let sit 30 min. Then bake 3o min. at 350 degrees.
Serve warm.


Golden Congo Squares

Preheat oven to 350 degrees. Melt 2/3 cup butter. Stir in 2 cups of brown sugar. Remove from heat. Cool 10 min. Beat 3 eggs, 1 at a time into this mixture. Add 2 2/3 cups flour and 2 1/2 tsp. baking powder. When mixed, add 1 cup chopped nuts & 1 cup semi-sweet chocolate chip morsels. Mix well and spread in 15 X 10 inch greased baking dish. Bake 25-30 min. Cut into 2inch squares.
Yields 3 doz.


Date Cake

Add 1 cup of boiling water to 1 cup chopped dates with 1 tsp baking soda. Let sit to cool.
Mix 1 egg
1 cup sugar
1/2 cup oil
1 tsp. vanilla
Then mix with date mixture.
Add 1 1/2 cup flour. Mix together. Bake in greased 9 X 12 inch baking dish at 350 degrees for 30min.
While baking make topping.
Melt 4 Tablespoons butter. Add 1/2 cup brown sugar, 1/2 cup coconut & 2 Tablespoons of milk. Bring to boil. Pour over warm cake and place under broiler few min.
