Kim's Frittata

8 eggs
4 tbsp butter, melted
1/3 cup flour
1 tsp baking powder
1 cup cottage cheese
1-1/2 cups shredded cheddar cheese
1 to 2 tsp dill (or other favourite herbs)
(fresh) parsley
pepper to taste

Whisk eggs with melted butter. Add flour and baking powder and whisk until smooth. Stir in cottage cheese and shredded cheese, dill (or other herbs) and pepper. Stir until smooth.
Grease 9 inch pieplate* (or spray with Pam). Pour eggmixture into pieplate and bake at 350 degrees Fahrenheit for 25 to 35 minutes until slightly browned and knife inserted in centre comes out clean.
Remove from oven and rest for a few minutes. Cut in wedges and serve with tomato slices and sprinkle with more parsley. Serves 6 - 8.

*can also be made in 9x13 casserole and cut into 12-15 squares to serve up to a crowd as part of brunch.


Mexican Hash with Ovenbaked Eggs

8 eggs
8 slices precooked bacon (Maple Leaf or Schneiders)
shredded cheese
1 large can potatoes
2 tsp olive oil
1/2 cup salsa

Serves 4.

Spray muffin tin with Pam.
In each section place a circle of the precooked bacon
Crack 1 egg in a small ramekin and then slide into bacon ring. Take care not to break yolk. Proceed for all 8 eggs
Place in preheated 350 degree oven and bake 10 min. Remove from oven and add 1-2 Tbsp. shredded cheese to eggs. Return to oven and continue baking until cheese is melted and eggs are set to desired doneness.

In the meantime drain potatoes and cut into cubes. Heat olive oil on medium heat in non-stick frying pan. Heat potatoes thru thoroughly and fry a little. Stir often. Add salsa and heat thru while stirring on medium-low heat.

To serve:
Place 2 eggs on a plate with 1/4 of potato mixture. Sprinkle with parsley and garnish with tomato slices. Serve with sour cream (if desired).

*This recipe can easily be multiplied to accommodate a crowd.
*Handy to prepare ahead and pop in the oven to be ready at the perfect time.
*Instead of cheese on top place a small piece of bacon on top (otherwise top becomes leathery)
