Mediterranean Quiche

6 servings:

Preheat oven to 350 o

1 Pie crust

Use a good non-stick spray on a pie plate. Make your favorite piecrust recipe or use any quality pre-made crust. Press the piecrust into the pie plate and pinch the edges. I always like to put the pie plate with the crust in the freezer while I’m preparing the rest of the ingredients. The crust seems to come out better if it is frozen before going into the oven.


6 eggs
1 cup cottage cheese
1 box frozen spinach or one bunch fresh spinach (cooked, chopped and drained). Make sure you squeeze all of the excess water out whether frozen or fresh.
1 tsp. salt
½ tsp. black pepper
1 tsp oregano
1 tsp basil
1 Tbls garlic powder.
1 Cup Feta cheese
1 Cup grated Swiss cheese.

In a large bowl wisk eggs, thoroughly mix in cottage cheese. Add seasoning and all other ingredients. Pour the mixture into the piecrust. Place in the preheated oven and cook for 40 to 50 minutes. Let the quiche cool for about 10 minutes before cutting and serving.
