Dark Chocolate Bundt Cake

Ingredients:

4 C. Flour
2 tsp. Baking Powder
4 Eggs
1 ½ C. Cocoa
2 C. Coffee
3 C. Sugar
4 tsp. Baking Soda
1 C. Oil
2 C. Milk

Directions:

Beat together with electric mixer. Pour into 2 well greased and floured bundt cake pans. Bake at 350 for aproximately 50 minutes or until toothpick comes out clean. Cool slightly and remove from pans.

When completely cool, top with powdered sugar or chocolate glaze.


Banana Pecan Streusel French Toast with Amaretto Sauce

Banana Pecan Streusel French Toast w/ Amaretto Sauce (Serves 12)


4 ripe bananas, mashed (1 1/3 cups)
8 slices Texas bread cut into 1" cubes
1-12 oz can evap. milk
1/4 C. brown sugar
3 beaten eggs
¼ tsp. almond extract
1 Tbs. vanilla
2 Tbs. flour
½ C. sugar 1 Tbs. melted butter
½ C. chopped pecans
2 tsp. cinnamon


In a large bowl stir together bananas, milk, eggs, sugar, vanilla, 1 t. cinnamon and almond extract. Place bread cubes in a lightly greased 9 x 13 pan. Pour egg mixture evenly over bread. Sprinkle with streusel mix. Cover and refrigerate overnight.

Streusel-- in a small bowl combine brown sugar, flour, butter, and 1 tsp. cinnamon. Stir in pecans.

Bake uncovered at 350 degrees for about 35-40 minutes or until lightly browned. Serve topped with Amaretto Sauce and a few banana slices.

Amaretto Sauce:
½ C. Butter
1C. powdered sugar
¼ C. Amaretto
1 egg yolk
Melt butter and sugar together in a small pan over low heat. Add Amaretto and egg yolk, cooking and stirring for 2 more minutes.
