  Recipe : Grilled Marinated Black Tipped Shark

2 center cut 7oz Black Tipped Shark Steaks
1 inch thick
(should be peach colored, odorless and firm)

Marinade:
1 tsp chopped cilantro
1 ½ tbls small diced red onion
1 tbls ground fresh garlic
2 tbls small diced red pepper
4 tbls virgin olive oil
1 ½ tsp white or rice vinegar
1 tsp chopped capers
1 tbls chopped ripe olives

- Mix marinade and reserve 1/3 for topping
- Marinade steaks for 4 hours
- Place on grill, 6 minutes each side
- Served with reserved marinade on each

Accompaniment suggestion: Spinach Couscous
