Recipe : Deer with spiced bread sauce |

Fry 1 chopped onion for several minutes in a table spoon of butter. Then add 1 chopped garlic clove and fry for 30 sec., add 2 glasses of red wine and 1 glass of game stock and cook until the mixture is reduced to 1/4 of its original amount. Then add 2-3 spiced bread cookies, crumbled, and stir for 30 sec. Then remove the pan from the heat, purée the mixture with a blender, put back in the pan, add 1 table spoon of butter and keep warm.
Fry the deer in butter over a high heat to seal and brown all over, season it with salt and pepper and put in a roasting tin in a 175C oven for 10-15 minutes.
Serve the deer with this spectacularly tastful sauce, brussels sprouts and a half potato/half celeryroot purée.
