Recipe : Smoked Salmon Fritata

| 8 eggs ¼ C milk ¼ C chopped, fresh chives ¼ C chopped, fresh basil ½ t pepper dash salt 2 t olive oil 2 oz crumbled, cold sheeps cheese (cream cheese also works) 3 oz thinly sliced, smoked salmon, chopped
Preheat broiler, or oven to 400°. Whisk together first six ingredients. Heat the oil in a 10 ovenproof, nonstick skillet until hot, but NOT smoking. Add egg mix and scatter cheese over top, then cook for 3-5 minutes, until the egg is almost set, but still moist on top. Sprinkle salmon on frittata, and press into the eggs. Broil about 6 from flame until set, slightly puffy, and golden on top, 1-2 minutes. Cool 5 minutes, then carve and serve.
