The Falling Chocolate Cake John Shaw, Executive Chef
Ingredients-Serves 5 People 2 Tbs. Cocoa Powder 3 oz. Chocolate finely chopped 2 Eggs Egg Yolks 3 oz. Sugar 1 ½ oz. Cake Flour Butter the baking dishes and then dust with cocoa powder Melt the chocolate and the butter in a double boiler, , then with an electric mixer, beat the eggs and sugar until it is light and fluffy Fold in the chocolate butter mixture Add the flour and then mix just until incorporated Spoon the batter into the prepare dishes, filling no more than ½ full The batter will hold for up to two days after it has been made Bake for 8-10 minutes on 350 degrees or until the top has a slight crack and the sides have set To serve carefully invert-baking dish on the plate and cake should slide out, serve with fresh berries or whip cream, ice cream and chocolate or vanilla
