  Recipe : Mandarin Pecan French Toast

Ingredients:

8 oz. Cream Cheese, softened
4 Large Eggs, beaten till creamy yellow 8 oz Can of Mandarin Oranges
1/2 t Vanilla Extract
¼ t Nutmeg
2/3 C Fresh OJ
1/3 C Milk
3 T Sugar
8 Slices Wheat Bread, trimmed
1/3 C Butter
½ C Pecan Halves

Prepare Filling: Soften 8 oz. cream cheese with 1T of milk & 2 T of orange juice and mix with 2 T of sugar and 1 egg.
Prepare Dish: Melt butter in microwave in 8” x 8”” casserole. Top with four of eight bread slices, cover with filling and place 8-10 orange slices on each serving. Top with second round of bread slices.
Mix eggs & sugar, add & mix in vanilla, nutmeg, then remaining OJ, then milk, mix and pour over bread stacks. Arrange about 8 pecan halves on top of each bread stack. Cover and refrigerate 1 hour or overnight. Bake, uncovered in preheated 400 oven for 30 minutes or till golden. To serve, loosen edges of bread from pan sides with knife blade. Cut into individual bread size servings.

Serve hot—Serves 4 hungry people.
This is SOO easy, looks great with pecans on top, and tastes yummy! However, it is NOT “Heart Happy”!
